Rocky Mountain oysters are deep-fried bull testicles. Denver's 125-year-old restaurant The Buckhorn Exchange is the most famous purveyor of this regional treat. The Buckhorn Exchange is part restaurant, part Wild West museum, with hundreds of taxidermy animals and Western memorabilia covering the walls.
