Veg Biryani || वेज बिरयानी

Ingredients

Basmati Rice - 1 Cup (250 Ml)
Ghee - 2 tsp
Whole Spices [Cinnamon, Cardamom Pod - 3 Nos, Star Anise - 1
Clove, Bay Leaf]
Onion - 2 Chopped
Ginger-Garlic Paste
Oil - 6 Tsp
Tomato - 1 Chopped
Turmeric Powder - 1 tsp
Salt
Curd - 1/2 Cup
Potato - 1 Bowl
Carrot - 1 Chopped
Few Mint Leaves
Few Coriander Leaves
Water - 2 Cups

For Masala Paste
Kashmiri Red Chili - 3 Nos
Green Chili - 2 Nos
A Piece of Ginger
Chopped Onion - 2 Tsp
Few Mint Leaves
Few Coriander Leaves
Little Water

Method
1. Wash 1 cup (250 ml) of basmati rice and soak it in water for about 30 min.
2. After 30 min, drain the water and keep it aside.
3. Take a pot full of water add all the Whole spices in water and add the soaked rice in the pot and cook 80% of rice. And drain the water.
4. Pour 4 tbsp mustard oil in a kadhai and fry 4 fine chopped onion until golden brown. After take it out aside.
5. Add 2 spoon of oil, Add same all Whole spices, and 1tsp turmeric powder, 1/4 tsp red chili powder,11/2 tsp biryani masala fry them well.
7. Add 1/2 bowl of curd and cook for 15 minutes.
8. Veggies to be chopped and added – 1 large potato, 1 carrot, 1 bowl of capsicum, 1 bowl of yellow capsicum. Mix & cook the ingredient for about 5 min.
10. For flavor add some mint and coriander leaves.
11. Finally, layered the soaked basmati rice and 2 tsp of desi ghee and milk for it to cook. (add salt as needed)
12. Now cook the biriyani for 20 medium in medium heat.on the Tawa.
13. You can now serve the delicious veg biriyani with your choice of raita or onion salad.
