मिक्स वेजिटेबल और पालक पकोड़ा

1. MIX VEGETABLE PAKODA (MIX VEGETABLE FRITTERS)

INGREDIENTS:

Carrot- 2 Tbsp grated

Cucumber- 2 Tbsp grated

Onion- 2 Tbsp finely chopped

Cabbage- 2 Tbsp finely chopped

Ginger garlic paste- 1 Tbsp

Green chilli- 1 or 2 finely chopped

Salt to taste

Coriander leaves- 2 Tbsp finely chopped

Gram flour (Besan)- 2 Tbsp

Garam masala- ½ tsp

Turmeric powder- ½ tsp

Oil to fry

METHOD:

• Take all vegetables in a bowl. Add ginger-garlic paste, green chilli, salt, turmeric powder, garam masala and coriander leaves. Mix well. Leave aside for 10 minutes.

• Add gram flour/ Besan to vegetables and mix well.

• Batter will be formed with the water released from vegetables.

• Heat oil on medium flame.

• Put bhajiyas in oil and fry till golden brown and crisp.

• Serve hot with chutney or ketchup.

2. PALAK Pakoda

INGREDIENTS:

Palak/Spinach- 1 cup (thin chopped)

Ginger-garlic paste- 1 Tbsp

Green chilli- 1 or 2 finely chopped

Salt to taste

Turmeric powder- ½ tsp

Gram flour (Besan)- ½ cup

Rice flour- 1 Tbsp

Water as required

Oil to fry

METHOD:

• Take gram and rice flour in a bowl. Add water little by little to take thick batter.

• Add ginger-garlic paste, green chilli, salt, turmeric powder and spinach. Mix everything gently. Rest for 5-10 minutes.

• Heat oil on medium flame. Put medium size bhajiyas in oil using spoon or hand.

• Fry till light golden brown and crispy.

• Serve hot with chutney or ketchup.
