Ceviche is the best way to experience seafood. How to make keto Ceviche. Basic ceviche recipe.

Raw fish is "cooked" in citrus juice. It’s not exactly cooked, nor is it raw, either. Citric acid a causes a chemical process called denaturation. In this process, lime juice changes the proteins in the fish, altering the fish's chemical and physical properties. When fish is bathed in citrus juices, this process of denaturation turns the flesh firm and opaque, as if it had been cooked with heat.

It is the best way to experience fish.

Recipe:

1 lb Fresh White Fish (1/2 chunks)
Juice of 5 limes and 1/2 Lemon
1/4 White Onion
2 Tbsp minced Cilantro
1 Tbsp minced Chili
1/2 Tbsp Sea Salt
1/2 Tbsp Pepper
1/4 cup Minced Tomato

Use a very fresh fish. White, non-oily fish is best.

In a nonreactive bowl toss the fish in the citrus mixture so that all the pieces are covered. Add all the ingredients except the onion and let sit for 5 minutes.

While the fish "cooks" in the marinade, slice the onion into thin slices. Place in an ice water bath to take the "bite" out of the onion.

Plate the ceviche, and top with the onion. Garnish. I used edible flower petals to make this simple dish pop!. Enjoy this amazing seafood dish.
