This crunchy keto crouton is impressive! A keto salad, garnished with a low carb crouton. Fried egg yolk. I'll show you how!

Recipe:
Eggs
Pork Rinds
Peanut Oil

We start by warming up sous vide bath to 147 F. and let the eggs (shell and all) sit immersed for 1 hour.

Then replace the warm water with ice water to cool them down quickly. Then remove the egg whites by cracking the egg and gently peeling the whites off.

Using a rolling pin crush the pork rings into bread crumb size pieces. Then "bread" the yolks by rolling them in the pork rinds.

In a high walled pot heat a neutral oil like peanut oil to 350 F. Fry the yolks for 30 seconds to a minute.

Cool on a paper towel and use your crunchy yolks to garnish your favorite salad.
