Crab soup ( Sup cua) - Exotic Saigon street food - Vietnam Street cuisine

Sup cua is a very special dish from crab. Most of the dishes from crabs are considered as luxury dishes which are only served at expensive restaurants. Sup cua is a simple dish which can be found everywhere in Saigon. It is a dish for everybody including rich people, poor people (workers, pupils, motorbike taxi drivers, etc.), foodies. In Saigon, it is easy to find a Sup cua stall at any corner (at local markets, in front of schools, universities, in street food areas, in hidden back alleys, in old apartment buildings, etc.). A Sup cua stall is easily recognized for a very big pot of Sup cua on an oven.

There are not less than 10 ingredients for Sup cua: chicken, crab meat, mushroom, quail egg, corn, green onion, coriander, chili pepper, pea, tapioca starch, pork bone, century egg, pork brain, crab stick, shrimp, etc. The broth is cooked from pork bone so that it is rich and flavorful. Tapioca starch and egg white make the broth thick and velvety. The food is topped with aromatic green coriander. It is served with minced/sliced chili pepper and fish sauce. Diners can add salt and hot tastes to the food at their wish.
