Afghani Pulao | Kabuli Pulao | Mutton Pulao | Rice Recipes by MJ's Kitchen
Also called Kabuli Pulao

very few spices are used in it but it is very delicious.

Let's start cooking Afghani Pulao

To make Afghani Pulao we need:

Ingredients:
1 Kg Boiled Mutton,
750 gram Rice (soaked in water an hour before)
4 Cup Mutton Stock,
1 Cup Oil,
1 cup Carrot (julienne cut),
1 Onion (sliced)
3~4 tbsp Black Raisins,
3~4 tbsp Almonds,
2 tbsp Sugar,
1 tbsp Ginger Garlic Paste,
1 tsp Garam Masala Powder,
1 tsp Cumin,
1 tsp Salt,
1 tsp Black Pepper Powder,

Method:
- Turn on the flame & take 3~4 tbsp Oil from 1 cup oil.
- Add carrot, sugar & a little water to the pan.
- Cook it until carrots are soft.
- Now add raisin.
- Take it aside once carrot & raisin is well fried.
- Now take another pan to cook rice.
- Add all remaining oil, fry the onion in it.
- Add ginger garlic paste once onion is brown & fry.
- Add mutton & fry for 2~3 minutes.
- Add garam masala powder, cumin, salt, black pepper powder & fry the mutton in spices.
- Now add mutton stock & little water if needed.
- Add soaked rice once stock is near to boil.
- Cover & let the rice cook.
- Simmer for 12~15 minutes at low flame once liquid is near to dries out.
- After 15 minutes at low flame, mix the rice and serve garnishing with fried carrot & raisin.
- Our delicious Afghani Pulao is ready.
