American chop suey is an American pasta dish popular in New England. It is related to other popular and similarly regional pasta dishes like American goulash and even chili mac. Despite its name, it has only a very distant relation to Chinese and American Chinese cuisine.

Ingredients for Fried Noodles:
(Serves 2)
- 3-4 tbsp Oil
- 100 gms Noodles(boiled)
- Cornflour

Ingredients for Chopsuey:
- 2 tbsp Oil
- 200 gms Boneless Chicken (sliced)
- 1 tsp Garlic(minced)
- 1 tsp Ginger(minced)
- 1 Spring Onion(white)
- 1/2 cup Cabbage(shredded)
- 1 Carrot
- 1 Capsicum(sliced)
- 1/4 cup Mung Beans
- 1 1/2 cup Chicken Stock
- 5 tbsp Tomato Ketchup
- 1 tbsp Chilli Sauce
- 1 tsp Soy Sauce
- 1 tbsp Corn Flour
- Salt
- Sugar
- 1/4 tsp Vinegar

Method:
1. In a wok take oil, and heat it up
2. Take noodles in a medium-sized bowl; Add cornflour to it and toss it together
3. Now, in the hot oil add these noodles, and let it fry till a little on a medium-flame
4. In a separate pan heat oil, and add sliced boneless chicken to it
5. Fry them till they turn golden brown
6. Meanwhile, if the noodles turn golden brown, flip them over and fry it on the other side as well
7. Once the chicken turn golden brown take them out in a plate and turn off the flame
8. Similarly, if the noodles are done, take them out on a paper towel, to drain the excess oil, and turn off the flame
10. Now, add white spring onion to the wok, shredded cabbage, thinly sliced carrot, finely sliced green capsicum
9. In the same wok, add minced garlic paste, minced ginger paste and saute it till the raw aroma of ginger-garlic goes away
11. Mix these ingredients properly, and then, add in fried chicken, mung beans and chicken stock
12. Mix it and add tomato ketchup, chilli sauce, soy sauce
13. Give all these mixtures a good stir
14. Now, in the little chicken stock add 1 tbsp cornflour
15. Mix it and add it to the wok
16. Turn the flame to high and stir the mixture; Add in salt & sugar
17. Turn off the flame and add vinegar to the wok
18. Mix it; take it out in a bowl and serve it with the fried noodles
