Sweet corn is much loved in our home and in all forms especially charcoal roasted corn on the cob with a mixture of salt, chili powder and lemon juice sprinkled over it. But have you ever had it in the form of curry? Corn Sabzi is a simple Indian curry recipe prepared with sweet corn kernels in a spicy and creamy tomato-based sauce. The taste of corn curry recipe is mildly sweet and is ideal for fewer spice eaters. It tastes great when served with Cheese Garlic Naan, Roti, Paratha and it can also be served with jeera rice.

Ingredients:
(Serves 2)
- 1 tbsp Ghee
- 1 tsp Cumin Seeds
- 1 Onion(chopped)
- 1 Green Chilli(slit)
- 1 tsp Ginger & Garlic Paste
- 2 Tomatoes(boiled & Puree)
- 1 tsp Garam Masala
- 1 tsp Kashmiri Red Chilli Powder
- 1/2 tsp Coriander & Cumin Seed Powder
- 100 gms Paneer(crumbled)
- 1 tbsp Fresh Cream
- Water
- 1 cup Corn(boiled)
- 1 tsp Sugar
- Salt
- 1 tsp Fenugreek Leaves(crushed)
- Water
- Coriander Leaves

Method:
1. Add ghee in the pan and heat it
3. Once the ghee is hot, add cumin seeds, chopped onions
4. Once the onions turn light brown, add slit green chilli, ginger & garlic paste and saute it
5. Now, add Tomato Puree along with garam masala, kashmiri red chilli powder, coriander & cumin seed powder
6. Cook the tomato puree for atleast 7-8 minutes, till the water in the puree completely dries up
7. Now, add paneer to the mix followed with 1 tbsp fresh cream, and mix it
8. Add in water to give it a gravy consistency, and mix it again
9. Now, add corn to the gravy, followed by 1 tsp sugar
10. Add salt, fenugreek leaves and give it a good mix
11. Now, add some more water, coriander leaves
12. Turn off the flame and take it out in a serving bowl
