Ingredients:

- muffin tray, lightly greased with butter
- 1 diced onion
- 1 packet diced ham
- 2 chopped tomatoes
- shredded cheese
- 6 eggs
- 1/2 cup milk
- salt and pepper

Here's How:

First lightly brown the onions and ham in a pan. Of course, you can be a little creative here and add in your favorite ingredients (sausage, peppers, mushrooms etc).

Once the mixture is lightly golden brown, then distribute it evenly between the 12 muffin molds.

The mini-omelettes are particularly tasty if you sprinkle some grated cheese in as well (e.g. Emmentaler or Gouda).

Mix together 6 eggs, 1/2 cup of milk, 1 tbsp starch and some salt and pepper. Mix until it becomes one mass.

Distribute the egg mixture over the ham in the muffin tray. Be careful to leave around a centimeter above the mixture, because the omelette will grow in the oven.

Place the muffin tray on the middle rack in a preheated oven. Bake for around 20-25 minutes at 375°F or until golden brown.

And voilà: The result! For safely, let them rest for a couple of minutes to cool. Then, ENJOY!
