The crumbs on top are the best part.

Cake Ingredients:
¼ cup coconut flour
⅔ cup almond flour
1 tsp baking powder
¼ cup monk fruit sweetener
2 tsp cinnamon
¼ cup melted coconut oil
¼ cup non-dairy milk
4 eggs

Crumb Ingredients:
¼ cup plus 2 tbsp coconut flour
¼ cup plus 2 tbsp almond flour
2 tsp cinnamon
2 tbsp coconut oil melted
2 tbsp cashew butter could sub with another nut butter
Instructions

Cake Instructions:
Preheat oven to 350 degrees.
In a medium-size bowl, whisk together coconut flour, almond flour, baking powder, monk fruit and cinnamon.
In a separate small bowl, mix together rest of ingredients.
Add wet ingredients to dry ingredients and whisk until a smooth batter is formed.
Pour in a greased baking loaf pan, and set aside on counter while preparing crumb.
Crumb Instructions:
In small bowl, mix together coconut flour, almond flour, and cinnamon.
Once combined, add in coconut oil and cashew butter and combine with a rubber spatula(this will be very dry, so using your hands to combine could help too!) Assemble:
Break up crumb mixture and crumble over the entire top of the prepared batter in loaf pan.
Bake for 45-60 minutes or until a toothpick inserted in center comes out clean.
Let cool for 20 minutes before serving!
