MOM'S TRINI CURRY CHICKEN RECIPE

1 WHOLE CHICKEN CUT UP (you can get the butcher to cut your chicken for you or cut it yourself)
2 TABLESPOON OF CHIEF CURRY POWDER
1 CHOPPED ONION
2 GARLIC CLOVES
1/2 GREEN PEPPER
1/2 RED PEPPER
5 SPRIGS OF THYME
2 DICED POTATO
1 CAN OF CHICKPEA

1 TABLESPOON OF KETCHUP
1 CUP OF BOILING HOT WATER
1 TEASPOON OF MATOUKS PEPPER SAUCE (optional)
1 TEASPOON OF GRACE PEPPER SAUCE (optional)
1/2 TABLESPOON SEASONING SALT
1 TABLESPOON OF SALT
1/2 TABLESPOON BLACK PEPPER
1/2 TABLESPOON MS DASH
3/4 of a cup OF VEGETABLE OIL

Quick and Easy cooking instructions
1. Season Chicken
2. Heat Vegetable oil MEDIUM heat
3. Add curry powder and STIR create a paste
4. Add garlic
5. Add your chicken and turn heat up to a little above MEDIUM
6. Add 1 cup boiling water
7. Add potato and chickpeas
8. Let cook for 25 minutes
9. DONE

Eat with Jasmine rice and a side of tomato or salad. YUMMY!
