A Mojito popsicle is the perfect summer alcoholic treat to make when the weather gets warm. This minty cocktail works perfectly as an ice lolly.

How to make a Mojito popsicle - a perfect Summer treat.

Ingredients
125 g (4oz) caster sugar
450 ml (15 fl oz (¾ pint)) water
Stalks and half the leaves of three mint sprigs
Finely grated zest and juice of four limes
75 ml (3 fl oz) white rum
A few reserved mint leaves

Directions
In a small pan heat 125g (4oz) caster sugar and 450ml (3/4 pint) water, stirring to dissolve sugar.

Off the heat, add stalks and half the leaves from 3 mint sprigs (reserve remaining leaves) and finely grated zest of 4 limes.

Cool, strain into a jug (discard mint and zest) and mix in lime juice and 75ml/3fl oz) white rum.

Divide among 10 x 75ml/3fl oz) ice lolly moulds – the mixture shouldn’t fill moulds completely.

Put reserved mint leaves into each mould.

Cover with mould lid and insert sticks. Freeze until solid. To serve, remove from freezer 10-15min before lifting out lollies.
