Breakfast doesn't have to be boring, so try these healthy toast topping ideas that'll keep you full, and have your tastebuds tingling.

1. Whipped Goats’ Cheese, Fig, Honey and Walnuts:
2tbsp soft goats cheese
1tbsp soured cream
Pinch of thyme leaves, plus extra to serve
1 slice seeded bread, toasted
1 fig, halved or quartered
1tbsp runny honey
1tbsp crumbled walnuts, toasted
In a small bowl, using an electric whisk, mix the goats cheese, soured cream and thyme with plenty of black pepper until light and creamy. Spread over hot toast and top with fig, a drizzle of honey, sprinkle of walnuts and thyme leaves.

2. Balsamic Roasted Cherry Tomatoes with Ricotta:
75g (3oz) cherry tomatoes, on the vine
1tbsp balsamic vinegar
1tbsp olive oil
3tbsp ricotta
1 slice seeded bread, toasted
Basil leaves, to garnish
Heat the oven to 200C (180C fan) mark 6. Toss the tomatoes with the vinegar and oil in a small roasting tin and season well. Roast for 10min, until just beginning to burst. Spread the ricotta over hot toast and top with warm tomatoes, sprinkle with basil and spoon over any cooking juices.

3. Beetroot, Avocado Feta and Pomegranate:
1 slice seeded bread, toasted
2tbsp beetroot hummus
½ avocado, sliced
25g (1oz) feta
2tbsp pomegranate seeds
1tbsp olive oil
Spread hot toast with beetroot hummus, arrange the avocado on top and crumble over the feta. Sprinkle with pomegranate seeds, freshly ground black pepper and a drizzle of olive oil to serve.

4. Spicy Egg and Asparagus:
1 large egg
6 asparagus spears, trimmed
1 slice seeded bread, toasted
Knob of butter
1-2tsp sriracha, to taste
1tsp mixed seeds

Bring a medium pan of water to boil, add the egg and simmer for 7min. Drain the egg into a colander and run until cold water until cold. Then peel and quarter. Meanwhile, add the asparagus to a pan of boiling water and cook for 3min. Drain well. Spread the hot toast with butter, top with asparagus and egg. Drizzle with sriracha sauce and sprinkle with seeds to serve.
