Oxtail is a tough, cheap but flavourful cut and makes sublime, rich casserole. Find out how to make a delicious oxtail stew with our step-by-step video.

1. Put flour in a sealable bag and season well with pepper and salt. Put oxtail pieces into bag in batches. Seal bag and rub it well to coat oxtail in flour. Repeat with all oxtail pieces.

2. Heat oil in a large casserole dish. Brown oxtail in batches over a medium heat turning every now and then. Remove and set aside.

3. Add a little more oil to dish and fry the onions, carrots and celery. Cook gently for 10min, until softened and lightly browned, stirring occasionally.

4. Add oxtail back in and stir in wine, stock, tomato puree, garlic and the thyme and bay leaves. Bring to a simmer and cover with lid.

5. Transfer to oven and cook at 150°C (130°C fan) mark 2 for 5-6hr, skimming off any fat from surface and stirring stew halfway through until meat is very tender and falling off bone, and sauce is thick.
