Make meringue nests for a dinner party dessert with our step-by-step video

1. In a large mixing bowl, whisk egg whites until stiff peak stage. Gradually add caster sugar while continuing to whisk until meringue is very stiff and shiny.

2. Prepare a piping bag with a star nozzle and put in a jug to hold steady. Spoon in meringue and twist top to secure bag.

3. Line a large baking sheet with baking parchment. Starting in centre, pipe outwards in a spiral, to form a circle about 7.5cm (3in) diameter. Pipe little stars around outer edge to create nest shapes. Repeat with remaining mixture.

4. Bake at 140°C (120°C fan) mark 1 for 1hr. Remove from oven and leave to cool on baking tray before carefully transferring to a serving plate and filling with freshly whipped cream and fruit.
