Today I will teach you how to prepare a Piquillo peppers cake, I discovered this curious recipe in a cooking magazine, although I changed the filling for another one I liked more, the truth is that I do not remember the filling of that recipe, but I wasn´t very convinced of it.

At first glance it may seem very complicated, but I assure you it is not, so if you are looking for something to surprise your guests, dare with this salty cake, you will leave them astonished.

You can make a cake for four people with the quantities I give you, although you can also cut it into thinner slices and serve it as a starter for six people.

To prepare this Piquillo peppers cake you will need:

For the cake:

- 150 gr. (5,29 oz.) of Piquillo peppers

- 2 large eggs

- 100 gr. (3,52 oz.) of flour

- 8 gr. (0,28 oz.) of baking powder

For the filling:

- 200 gr. (7 oz.) of cream cheese

- 20 large peeled prawns

- Chopped parsley

To prepare this Piquillo peppers cake you must follow the following steps:

-Separate the egg whites from the yolks.

-Crush the Piquillo peppers with the yolks.

-Mix the flour and baking powder separately.

-Add the flour and baking powder mixture to the crushed peppers.

-Beat the egg whites until they are firm.

-Add the whites to the mixture carefully and making enveloping movements so they do not lose volume.

-Pour the mixture on a tray with baking paper and spread it with a spatula.

-Bake 10 minutes at 160 ºC (320 ºF).

-Take it out from the oven, roll the dough on itself with the help of the baking paper and allow to cool.

-Cook the prawns for a couple of minutes in boiling water.

-Leave the prawns in a bowl of cold water to cut the cooking.

-Mix the cream cheese with the chopped parsley.

-Unroll the cake and fill it with cream cheese and prawns.

-Serve sliced.
