Aloo Dum Biryani Recipe - Restaurant Style Veg Dum Aloo Biryani - Potato Dum Biryani - Varun

Dum Aloo Biryani is a feast to all the vegetarians out there. Made with a blend of fried potatoes, fine basmati rice and aromatic Indian spices this recipe will definitely be a hit in your kitchen. Do try it at home and share your feedback in the comments below.

Dum Aloo
500 grams Potatoes, boiled&fried
100 grams Curd

Spice paste:
1 tbsp Red Chilli powder
1 tsp Turmeric powder
1 tbsp Coriander seeds
Salt to taste
1 tsp Peppercorns
1 tbsp Fennel seeds
1 tbsp Cumin seeds
1 tsp Cloves
1 inch Ginger
10-15 Garlic
2 Green chillies
1 Bay leaves
1/4 cup Fried onions
1 cup Oil
Water for grinding
1 cup Water
1/4 cup Coriander leaves, chopped

Biryani Rice
500 grams Basmati Rice, 80% cooked with basic Indian spices and drained

Method of preparation:
Heat a vessel add fennel seeds, coriander seeds, cumin seeds and toast it on medium flame.
Transfer the spices into a grinder, add cloves, peppercorns, bay leaf, red chilli powder, turmeric and grind them into a powder.
Add Ginger, garlic, green chillies, fried onions and grind it one more time without water.
Add water and give it a final grind.
Our Spice paste is ready.

Heat oil in another vessel, add the spice paste, curd, stir and cook it on a moderate flame.
Add fried potatoes, salt, water, stir well, cover it and cook it on high flame.
Add parboiled rice, fried onion, coriander leaves, cover it and allow it to cook on dum for 15-20 minutes on low flame.
Our Dum Aloo Biryani is ready to serve.
