Easy festive nibbles | Lidl School of Christmas
  • 5 years ago
Christmas canapés - you're not alone if you're thinking they're expensive (not to mention a faff!) to make at home. In this sponsored collaboration with Lidl, Michelin star awarded chef Kevin Love shows Mumsnet Blogger Heledd two really easy alternatives. These fig and prosciutto skewers, and tostaditas with a spiced pear relish, are quick, easy, elegant - and a welcome break from pastry-based party nibbles.

For the skewers (makes 12)
3 fresh figs
6 slices of prosciutto, sliced in half lengthways
1 pack of mozarella balls
1 bunch of mint leaves (washed)
dark balsamic vinegar
olive oil
salt & black pepper

For the tostaditas with spiced pear relish (makes 8)
1 Mediterranean herb wrap
Olive oil, for brushing
1 pear, peeled and finely diced
150g of goats cheese (or any soft cheese)
2 tsp of lemon juice
1 tsp of runny honey
1/2 red chilli, deseeded and very finely chopped
2 tbsp of fresh coriander, chopped

Method
For the skewers:
1. Cut figs into quarters and drizzle them with olive oil, dark balsamic vinegar and a sprinkling of salt and pepper
2. Cut your mozzarella balls in half
3. Slice the prosciutto pieces lengthways before folding them into small package shapes
4. Stack your skewers: mozarella, then prosciutto, followed by a small mint leaf and finally into the fresh fig
Tip: if you cut the bottom off of your fig to make it flat, the skewer will stand upright

For the tostaditas with spiced pear relish:
1. Cut your tortilla wrap into 8 pieces (like a pizza)
Tip: Cutting the rounded edges off will make these more bite-sized
2. Brush them with vegetable oil and season with salt and pepper, before popping into a pre-heated oven at 180 degrees for 5-6 minutes, until crisp. When they're done, leave to cool
3. Mix together the remaining ingredients (pear, cheese, lemon juice, honey, chilli and coriander) to create your spiced pear relish, and dollop on top. Garnish with a touch more chilli and a sprig of coriander
