Chicken Caprese Recipe

Its commonly said that you eat with your eyes first and Chicken Caprese is definitely a beautiful dish that makes you want to dig right in! You might be surprised at how simple this tasty dish is to make.\r

Chicken Caprese\r

6 boneless skinless chicken breasts\r
2 large ripe tomatoes, sliced\r
1 pound mozzarella cheese, sliced\r
1/2 cup fresh basil, chopped\r
\r
Marinade:\r
2 Tablespoons olive oil\r
2 Tablespoons balsamic vinegar\r
1 Tablespoon honey\r
1 teaspoon garlic powder\r
1 teaspoon dried basil\r
1/2 teaspoon salt\r
Dash of pepper\r
\r
Mix all ingredients together in a small bowl. \r
\r
Balsamic Glaze:\r
1 cup Balsamic vinegar\r
2 Tablespoons sugar\r
Dash of salt\r
\r
Add balsamic glaze ingredients to a medium saucepan. Heat over medium heat stirring occasionally until thick and bubbly and reduced by half.\r
\r
Place chicken breasts in large dish. Pour marinade over top. Cover and refrigerate until 30 minutes before grilling. \r
\r
Grill chicken breasts for approximately 8 minutes on each side or until no longer pink inside. Place one slice of mozzarella on each chicken breasts and continue grilling until melted.\r
\r
Add sliced tomato and shredded basil to each chicken breast. Drizzle with balsamic glaze. \r
