There are numerous ways to prepare Majjiga Pulusu, our Andhra version of Kadhi, a buttermilk based stew. This pale yellow colored stew calls for vegetables cooked in a delectable combination of fresh coconut-green chillis paste and well beaten sour curd.
Vegetables like okra, bottle gourd, and drumsticks are usually used to prepare this sweet-sour flavored sauce with a tinge of spice that tickles your taste buds, though you could also use sweet potatoes, tomatoes, greens, and potatoes.

To Make Buttermilk Stew :

Ingredients:

1 tbsp Coriander Seeds
1 tbsp Yellow Split Peas
1 tbsp Split Bengal Gram
250 gms Ash Gourd(chopped)
Water
2 cups Thick curd
salt to taste
1/4 tsp Turmeric Powder
Curry Leaves
Coriander Leaves

For Paste:
1/2 cup grated fresh coconut
3 green chilies
1-inch ginger(chopped)

For seasoning/poppu/tadka:
1 tsp mustard seeds
3 tbsp ghee

Method:
1. Take Coriander Seeds, Split Bengal Gram, Yellow Split Peas in a small bowl and soak it well.
2. Next, add required water in the vessel and add ash gourd pieces and boil it.
3. For masala mixture, add fresh coconut pieces, green chilies, 1-inch ginger and grind it into a smooth paste.
4. Once it has done, pour it the boiling mixture, add curd and cook it for some time.
5. once it is cooked well, add tempering to it.
6. In a wok, add ghee and heat it.
7. Once the ghee is nicely melted, add mustard seeds.
8. Mustard seeds have started splutter, pour it in the buttermilk stew.

9.Garnish with coriander leaves and curry leaves

To Make Buttermilk Rasam:

Ingredients:
1 tsp carom seeds
Salt To Taste.
1/4 Turmeric Powder
1 tsp Mustard seeds
1 tsp Fenugreek seeds.
4 Green Chillies

Method:
1. Take thick buttermilk in the bowl and add salt, turmeric powder, and carom seeds and mix it well.
2. In a wok, add ghee and heat it.
3. Once the ghee is nicely melted, add mustard seeds, fenugreek seeds, carom seeds and green chilies.
4. Once tempering mixture is ready, pour it in the buttermilk mixture.
5. Garnish with coriander leaves and curry leaves
Serve with rice
