Mexican Red Rice And Beans ◈ RECIPE

Beans:\r

1lb pinto beans\r
\r
put beans into a crock pot filled half way with water\r
add garlic powder to taste (optional)\r
put on HIGH for 4-5 hours stirring occasionally\r
once theyre done drain some water and smash till creamy\r
add salt and pepper to taste\r
add mozzarella and sharp cheddar cheese to taste\r
(you can use a regular pot if you dont have a crock pot, just follow the same steps)\r

Red Rice:\r
\r
2cups white rice\r
1 can tomato paste\r
chopped onion (optional)\r
canola oil\r
chicken or tomato bullion \r
garlic powder\r
salt and pepper\r
\r
add oil to a pot on MEDIUM heat\r
add chopped onion, rice, garlic powder, salt, and pepper to taste\r
let rice cook until brown, stirring continuously \r
once rice is brown add tomato paste, water, chicken bullion, salt and pepper to taste\r
turn heat on HIGH, put cap on\r
bring to a boil then simmer for 15 minutes\r
once its done simmering turn the flame off and let it sit COVERED for 10 minutes\r
