14 oz firm tofu\r
1 Tbsp vegetable oil\r
1/2 small onion\r
1 red bell pepper\r
1 Tbsp lemon juice\r
1 tsp salt\r
4 Chinese eggplant (approximately 1 lb)\r

Stir-Fry Sauce:\r
2 Tbsp soy sauce\r
1 Tbsp vegetarian stir fry sauce\r
1 cup coconut water\r
\r
1 Tbsp vegetable oil\r
1/8 tsp ground black pepper\r
\r
Yields: 4-6 servings\r
