Poori is a hot, fresh, puffed-up Indian bread made of unleavened wheat flour dough. It is usually eaten during special religious and cultural occasions or when it is party time! It is usually eaten with spicy curies like potato curry or white chana. Else it is eaten with sweets like ‘halwa, rabdi or ‘kheer, or just by itself with a cup of tea or coffee. ‘Freezer pooris is my idea to save on time and to be able to serve fresh hot pooris, whatever the number of guests, or whenever there is an instant request from the kids!\r
Ingredients: For 10-12 pooris\r
Whole wheat flour (1 ½ cup)\r
Salt (½ tsp)\r
Carom seeds (ajwain) (1 ½ tsp)\r
Water (at room temperature) (less than ¾ cup)\r
Oil (3tbsp for kneading and rolling + for frying)\r

Notes:\r
1. Salt is optional, but recommended. Adding salt makes the pooris tastier.\r
2. Adding carom seeds is optional, but highly recommended. Since pooris are deep fried, carom seeds make them light on the tummy.\r
3. Flavored pooris can be made by adding puree of veggies like methi, spinach, beetroot etc. The quantity of water required to make the dough will reduce in these cases.\r
4. You may apply oil all at once to all the balls made from the dough and then start rolling. This prevents them from drying when you are rolling a larger number of pooris. \r
5. You may roll the pooris on the clean kitchen shelf or on any plain smooth surface.\r
6.. If you are rolling a large number of pooris, with the intention of frying them after a little while, cover them with a cling wrap or a damp kitchen towel, to prevent them from drying.\r
7. Storage tips: Place rolled out discs of dough between sheets of parchment paper. Put them in a ziploc bag(freezer safe) and suck out all air from the ziploc using a drinking straw. This would prevent ice-formation on the discs. Place the ziploc flat in the freezer. \r
8.The parchment paper can be re-used any number of times, till it tears apart.\r
9. Before frying the frozen pooris, I defrosted the discs only enough so that I can remove them from the parchment paper without breaking. Frozen items that have to be fried are never thawed because that introduces water in the hot oil, which can cause oil to splutter. This is true for all frozen items, poori included. If you thaw it on the kitchen shelf, then do it for little time only. Do not bring them to room temperature. Also. just like any other frozen item, any thawed/defrosted discs should not be re-frozen. Therefore, defrost only the count that you need.\r
