Recipe:

1 Cup vital wheat gluten
2- 3 Tbs Flour
2 Tbs mushroom powder
1 !/2 Tsp sea salt
1/2 Tsp ground cloves
1 1/2 Tbs maple syrup
1/2 Tsp black pepper

For the beet mix Add 1/2 cup of water with one small to medium beet and 1 Tbs Beefless Beef spice and puree in blender

5 Tbsp olive oil

You can find the recipe for the Beefless Beef spice on my channel, I have a video on how to make it.

Mix all the ingredients together with spoon and as it comes together then begin to massage by hand very well to incorporate everything together add olive oil at the end to help make your seitan more pliable and mold-able, If it becomes too wet add extra Vital wheat gluten a little at a time to make it turn out firm. put down saran wrap and Flatten out like a brisket add beefless beef flavor spice then add pickling spice to both sides of brisket (optional) add more salt to both sides. Saran wrap up the brisket and place in the refrigerate for 30 minutes to allow your vegan meat to rest.

Set oven to 275

Making the brine to go into your dutch oven or oven-safe pot:

5 Cups of water
2 Bay leaves
4-5 Peeled whole garlic pieces
2-3 table spoons olive oil
2 Tsp Brown sugar
1 Tbs mustard seed
1 1/2 Tsp allspice berries
1 Tbs spoon Jerk seasoning
1 Tbs beefless beef seasoning
3 Tbs sea salt

Cover and bring brine broth to a boil on top of your stove then reduce to a simmer, after you vegan meat has been in the refrigerator for 30 min take out of refrigerator unwrap from saran wrap then wrap up your vegan meat in cheesecloth and place in your brine, cover and put in stove and let it cook for 1 1/2 hours. Make sure to take it out halfway through, 45 minutes and flip it over in the pan.

Once finished cooking take out of stove remove your brisket and take out of cheesecloth add some olive oil to a pan (medium heat) place brisket in pan cover both sides with maple syrup just to help brown and sprinkle black pepper on it to taste, and apply a sweet yellow mustard, fry up both sides to a golden brown and you done. Enjoy!

This recipe turned out fantastic and was extremely tender and looked beautiful. I highly recommend trying this recipe.
