Pepperoni Rolls From Scratch

This is a recipe I grew up on. I I remember it was a huge treat to find these in my school lunches. See how easy they are to put together. Thanks for watching. \r

HOW TO MAKE THE PEPPERONI ROLLS\r
1 cup of milk 1 stick of butter Place this in the microwave till warm and butter is soft. not over 115 degrees or the yeast wont do its job. Once warm sprinkle butter and milk mixture with yeast. Let set for 5 minutes. You should be able to smell it and it can look bubbly. In a large bowl combine 1/3 cup of sugar and 4 cups of all purpose flour. Whisk these together so there are no lumps. in a small bowl you need to have 2 egg yolks. I use kitchen aid mixer. If you dont have one you can do by hand. Start with yeast mixture. Then add flour sugar mix on top. Then eggs. I turn mixer on low speed with dough hook. It takes about eight minutes to form a nice ball of dough. In my large mixing bowl that held my flour. I brush with oil (vegetable). I place my dough into the greased bowl. Work the dough around in the bowl so it is covered with oil. This keeps the dough from drying. Cover with plastic wrap. I place mine in oven with light on. It takes mine about 2 to 3 hours to rise. After is has doubled in size. I put dough onto a floured surface. Roll into a log. Cut with sharp knife. 12 pieces (Even) Grease a 9 by 13 glass or metal baking pan. Roll each individual pieces of dough out placing peperoni in center and pinching dough closed underneath. If you want you can add cheese. Lay them out onto pan. Cover again placing in warm place. It takes another hour to rise again. Bake 350 for 20 minutes. When done brush tops with butter.
