Brinjal Onion Curry…Brinjal is our family’s favorite vegetable. There are many different ways in which we prepare them. But this is one of the best recipes. It has a sweetness of onions, tanginess of tamarind and soft whole brinjals which are super delicious with rice/ roti.


Brinjal: 500 gm
5 tbsp Oil
1 tbsp Whole urad dal
1 tbsp Cumin seeds
6 -7 Dry Red Chillies
1 tbsp Tamarind
salt to taste
1/4 tsp Turmeric Powder


1. Add 2 tbsp oil in a pan and heat it. Once oil is nice and hot add Whole urad dal,
Cumin seeds, Dry Red Chillies and roast it well.
2. Once tempering is cooled down, put it in the mixie jar and grind it.
3. In a mixie jar, add Turmeric powder, Tamarind, Salt to taste, onions and grind it
into a smooth paste.
4. In a pan, add 3 tbsp oil, chopped brinjal and cook it well up to 10 minutes.
5. Add prepared masala mixture and mix it well.
6. Brinjal Onion Curry is ready now. Switch off the stove and
take it to the serving bowl.

Serve it with rice or dosa or Chapathi.
