4 tbsp. Oil
3 Onions, finely chopped
2 tbsp. Coriander seeds ( ధనియాలు)
2 Bay leaves ( బిరియాని ఆకు )
1 tsp. Mustard seeds (ఆవాలు)
1 Star anise ( అనాస పువ్వు )
4-5 Cloves ( లవంగాలు )
3 Green cardamoms ( పచ్చ యాలుకలు )
1 Black cardamom (నల్ల యాలుకలు )
1 tsp. Caraway seeds ( షాజీర)
1 tbsp. Poppy seeds ( గసగసాలు )
1 tsp. Stone flower (దగడ్ ఫూల్ )
7-8 Dry red chilies ( ఎండు మిరపకాయలు )
2-inch piece of Cinnamon ( దాల్చిన చెక్క )
10-12 Black pepper ( నల్ల మిరియాలు )
3 tbsp. Dry coconut ( ఎండు కొబ్బరి )
1 tbsp. Ginger-garlic paste
2 tbsp. Sorghum flour (జొన్న పిండి )
2 tbsp. Oil
750 gms. Chicken

- In a kadhai, fry onions in oil until it changes color.
- Now add coriander seeds, bay leaves, mustard seeds, star anise, cloves, cardamoms, poppy seeds, stone flower, dry red chilies, cinnamon, black pepper and dry coconut. Roast thoroughly until there is a change in the color.
- Turn the flame off and let the mixture cool down to room temperature.
- Add ginger-garlic paste, water and grind well.
- Now add Sorghum flour, water and grind again to a paste.
- In another kadhai, take 2 tbsp. oil and sear the chicken in it.
- Add the masala paste, water, salt, and mix thoroughly.
- Cover with a lid and cook for 20-25 minutes.

Saoji Chicken is ready to eat!
