THE BEST VEGAN DONUT RECIPE | OIL FREE & BAKED

This super quick and easy BAKED DONUT RECIPE is OIL FREE, can easily be made GLUTEN FREE, and absolutely DELICIOUS (and healthy!)! We also share with you 2 different glazes (original & chocolate) to dunk your donuts in! \r

INGREDIENTS:\r
DONUTS:\r
1 1/4 cup all purpose flour (or GF flour to make recipe gluten free)\r
1 tsp cinnamon\r
1/2 tsp nutmeg\r
1 tbsp tapioca starch\r
1 tsp baking powder\r
1 tsp baking soda\r
1/2 cup coconut milk (canned)\r
1 tsp vanilla\r
10 medjool dates\r
1 tbsp lemon juice\r
ORIGINAL GLAZE:\r
1/2 cup icing sugar\r
1/2 tsp vanilla\r
2 tbsp maple syrup\r
hot water to thin\r
CHOCOLATE GLAZE:\r
1/2 cup icing sugar\r
1 tbsp cocoa powder\r
1/4 tsp vanilla\r
milk to thin (about 1-2 tbsp max)\r

- Preheat oven to 350F.\r
- In a food processor add dates and coconut milk and blend until contents become a smooth paste.\r
- In a large mixing bowl sift in flour, cinnamon, nutmeg, tapioca starch, baking powder, and baking soda.\r
- Add vanilla, lemon juice, and date mixture and fold ingredients together. If dough is too dry, add a few splashes of coconut milk until everything is stuck together.\r
- In a non stick or silicone donut pan, fill each until they are 3/4 full. Bake for about 10 minutes or until they pass the toothpick test!\r
- Glaze the donuts about 5-7 minutes after being out of the oven, so they are still warm!\r
