This stunning and elegant cake combines two of my favourite flavours passion fruit and mango. It consists of several layers and is covered in double mirror glaze to give it a special wow effect. This passion fruit and mango mousse is so spectacular and is of the best desserts I have ever made. \r

Ingredients :\r
Almond sponge cake layer (18 cm ring)\r
2 eggs\r
125 gr of unsalted butter\r
125 gr caster sugar\r
125 gr plain white flour \r
1/2 tbsp baking powder \r
1 tbsp vanilla extr\r
1 tsp of almond extr \r

Mango jelly layer (18 cm ring)\r
300 gr mango puree ( puree your mangoes) \r
50 gr of sugar\r
10 gr OR 1tbsp of gelatine + 4 tbsp of cold water \r

Passion Fruit Mousse (20 cm ring)\r
200 gr strained passion fruit \r
120 gr caster sugar\r
3 sheets leaf gelatine\r
4 tbsp water\r
2 egg whites\r
1 tsp lemon juice\r
450 ml double cream, lightly whipped\r

Mango Mousse layer - (18 cm ring)\r
\r
300 mango puree (about 1,5 medium sized mangoes)\r
Juice 2 limes \r
250ml double cream\r
100 icing sugar\r
3 leaves gelatine\r
\r
Mirror Glaze :\r
150 gr glucose syrup\r
150 gr granulated sugar\r
75 gr Water\r
10-12 gr gelatin\r
75 gr Water for gelatin\r
100 gr condensed milk\r
150 gr white chocolate\r
Food colouring of your choice ( yellow and pink)\r
1 tsp of titanium dioxide ( optional)
