3 Easy Healthy Sandwich Recipes (Work + School Lunch Ideas)

Three easy, healthy sandwiches to bring to school or work. Avocado and Turkey, Mozzarella and Roasted Pepper and a Vegan Tuna Salad. YUM!\r

AVOCADO + TURKEY SANDWICH RECIPE\r
2 slices Raisin bread (I use the Food for Life brand)\r
1/2 avocado\r
2 ounces sliced turkey (I buy organic + nitrate free)\r

Lightly toast bread in your toaster oven.\r
\r
Mash the avocado with the pack of a fork and season with salt and pepper.\r
\r
Layer avocado on one slice of the toasted bread, pile on the turkey and pop on the top. Enjoy.\r

ROASTED PEPPER + FRESH MOZZARELLA RECIPE\r
2 slices of whole grain bread (I used the sesame Food For Life)\r
1 clove garlic\r
1/4 cup of jarred roasted peppers, roughly chopped\r
1.5 ounces fresh mozzarella cheese\r
5 fresh basil leaves\r

Lightly toast bread in your toaster oven. While the bread is still warm, rub it with the garlic and allow the garlic to melt into the bread.\r

Layer the roasted peppers on one slice of the bread and top with fresh sliced mozzarella and basil. Pop on the top and enjoy!\r

VEGAN CHICKPEA SALAD RECIPE\r
1 can garbanzo beans, drained and rinsed\r
1/3 cup finely diced red onion\r
1/3 cup finely diced celery\r
1/3 cup finely diced radish\r
3 tbsp. capers, roughly chopped\r
1/4 cup mayonnaise (be sure to buy a vegan brand to keep this recipe 100% vegan)\r
salt and pepper to taste\r

Add garbanzo beans to food processor and pulse a few times until you have a gravel-like consistency.\r
\r
Transfer beans to a medium bowl and add in the onion, celery, radish, capers, mayo and salt and pepper. Combine well.\r
\r
** To build a sandwich, choose your favorite bread type of bread and layer some greens on one slice. Pile on the vegan tuna salad, pop on the top and enjoy!\r
