When You're Short On Time, 'Make Ahead Burritos'

It is a scientific fact that breakfast burritos are awesome, but they're not always convenient to make. Plus, getting a breakfast burrito from a fast food joint can be greasy and expensive. So leave it to RTM's culinary super sleuth, Jessica Hord, to discover an easy recipe for breakfast burritos that shows you how to make a bunch at once so you can freeze and enjoy them all week.

 

You'll Need:

***Makes about 8 burritos.

 

— 1 lb. hot breakfast sausage

 

— 6 eggs, beaten with 1 tbsp. hot sauce

 

— 3 medium potatoes, peeled, cubed, and fried without seasoning

 

— Medium flour tortillas

 

— 2 cups shredded Colby-Jack cheese

 

 

Instructions:

 

1. In a large skillet, brown sausage.

 

2. Once sausage is cooked, add eggs and scramble. Toward the end of cooking the eggs, add potatoes.

 

3. Place 1/4 cup of shredded cheese in the middle of one tortilla and spoon some of the scramble on top.

 

4. Wrap burrito, then cover with plastic wrap and freeze until ready to use.

 

5. When ready to use, unwrap from plastic wrap, wrap in paper towel and heat. You're done!
