Apple Cake

A fall classic! This simple to make cake is moist, delicious, and doesn’t need an icing… though butterscotch sauce is mighty tasty on it.

Ingredients:
2 cups (500 mL) brown sugar
1 cup (250 mL) butter, room temperature
2 eggs
2 tsp (10 mL) pure vanilla extract
6 apples, grated (24 oz / 750g total weight)
2 tsp (10 mL) baking soda
2 cups (500 mL) all-purpose flour
2 tsp (10 mL) cinnamon
2 tsp (10 mL) ground cloves
1 cup (250 mL) chopped pecans
Homemade butterscotch sauce, for topping

Method:
Preheat oven to 350ºF (180ºC).
In a medium bowl, mix together dry ingredients.
In a large bowl, cream together the butter and sugar.
Add the eggs and mix well.
Stir in the vanilla.
Stir in the freshly grated apple.
Stir in the pecans.
Add the flour mixture to the wet ingredients and mix, just until incorporated.
Bake in a greased 9”×13” baking dish for 50 - 60 minutes, or until a toothpick comes out clean.
Allow to cool for at least 10 minutes.
Serve warm with butterscotch sauce or ice cream.
