How's everyone's 2016 going!?!? I hope you enjoyed this easy, healthy Vegan (or Vegetarian) recipe! Below is a list of the ingredients I used, but feel free to customize it any way you want!

Ingredients:
Whole Wheat Tortilla
Fat Free refried beans
Vegan Mexican Cheese blend
For the topping:
Shredded Cabbage
Corn
Tomatoes
Cilantro
Red Onion
Jalapeño
Lemon
Salt & Pepper
