Boeschepe, in the Flanders region, is the last French village before Belgium. At the crossroads of Europe, the family inn of the Vert Mont has been a one-star restaurant since 2013. Under wooden beams, guests tuck into hearty local cuisine.
In the kitchen, the team wear jeans. The chef is Florent Ladeyn. Self-taught, he cooks only local Flanders products and criss-crosses his region to discover new recipes.
