Salmon & Dill Potato Latke

Whip up this fast and tasty dish to impress your guests!



For the pancakes:
• 2 lbs. (1 kg) potatoes
• 2 spring onions
• Olive oil
• 1 egg, lightly beaten
• 1 oz. each flour, Salt and pepper
For the garnish:
• 6 thin slices smoked salmon
• A few sprigs dill
• 1 cup cream Fraise
• Salt and pepper
Instructions:
1. In a bowl, mix cream fraise and dill, then add salt and pepper
2. Grate the potatoes and onions using a food processor
3. Squeeze to remove excess water
4. In a large bowl, toss potatoes with onions, egg and flour
5. Stir well. Add salt and pepper
6. Heat oil in a medium skillet
7. Form small patties with the grated potato
8. Fry them on both sides.
9. Place a potato pancake on each plate, top with smoked salmon and a spoonful of dill cream,
10. Serve
