Ghost Pepper Crawfish Tamales

This week, chef David Guas of Bayou Bakery comes back to the Dude Food kitchen and brings you his Louisiana-style tamales. This easy, delicious recipe is perfect to make for guests or just to chow down on on your own. A few drops of some Indian ghost pepper hot sauce really adds some bite to this Mexi-Cajun delicacy. Sautéing together what David calls "the Holy trinity" of bell peppers, onions, celery along with garlic and spices, David makes sure the crawfish tails are packed with flavor. This Louisiana chef infuses a mix of Southern Bayou flavors into the sweet yellow corn tamale. Traditionally a Mexican dish, David has added his own fusion twist to the much loved corn husk bites.
